Blogging is a funny old world.
It is a world that is much more friendly than you would think, and a general support for one another that is felt.
I read more parenting blogs when my boys were young but have gradually started to enjoy them again more and more.
They are super for tips, family friendly recipes, a sense of knowing that you’re doing OK as a parent and that it all will be OK as there are people outside of your home and family circle that you can share with).

Most of these guys I met at a blogging conference three years ago this month. It was called Brit mums and it was a BLAST.
I respect these women who give up so much time to sit behind a computer at 10pm at night (my current state of play as I type this) for the passion of running a blog and sharing information.
Without further ado here is Morgana’s beaut recipe that I basically nulled her into sharing with us as I know you coconut fans will LOVE IT!

Coconut and Dark Chocolate Bites
200g desiccated coconut
3 tablespoons honey or maple syrup
4 tablespoons coconut oil
1 teaspoon vanilla
150g bar of dark chocolate for melting (I like Green and Blacks, yum!)
Pulse the coconut in a blender or food processor until the texture becomes like thick flour. I used my Nutribullet with the milling blade. Then transfer to a bowl and add the honey, coconut oil, and vanilla. If your coconut oil is in paste form then melt it in the microwave or in a pan first, this helps to bind everything together. Stir evenly until a thick paste forms.
Using your hands roll the mixture into roughly 18 small balls. I used the palm of my hands for this, and gently shaped them. Place each onto a baking tray lined with baking paper and put in the fridge to set for approximately half an hour or until firm to the touch.
Using a bain marie (fill a bowl with the chocolate and place over a saucepan of hot water gently heated on the hob) or a microwave melt the chocolate slowly and gently until smooth and spreadable.
Using two forks, roll each coconut ball in the chocolate until completely covered. Scoop the ball out with the fork and let the extra chocolate drip off the fork. Gently place the chocolate covered ball onto a sheet of baking paper. When you’ve done this with all the balls put them in the fridge to set.
Once set transfer into an air tight plastic container and put them back in the fridge. You need to keep them refrigerated or they will melt (as my husband found out when he kept some in his car on the way to work – oops!)
For those that are wondering, each ball contains approx 90 calories.
