Two dips for you which are not in the slightest bit Irish
apart from they are green in colour!
But both of these are quick to make and delicious .
They make for a fun, tasty, wholesome party dip or starter for your tortilla chips or pittas toasted and sliced.
Alternatively do what I did and throw some large tortilla wraps in the oven brushed with oil, warm through and then slice into triangles.
Last year my St Paddy’s day green turkey burgers were a HUGE hit
so you could make them and use the dips below as your toppings.
SPINACH SALSA
Ingredients
1/2 chilli – 1 for extra spice
Few sprigs of coriander
8-10 cherry tomatoes / 2 vine tomatoes chopped
Large Handful spinach
Juice 1 lime
Method
Whizz all ingredients in mixer+serve immediately
TZATZIKI
Ingredients
1/2 cucumber skin peeled + inside grated
Juice 1/2 lemon
1/2 tub Greek yoghurt
Good pinch coarse salt
Method
Mix all ingredients together in a bowl+serve immediately
ADDITIONS (this was delicious)
- Heat goats cheese to serve alongside the salsa. Spread onto tortilla slice then layer with salsa.
