02 Jan Accidental healthy bounty balls
Great use for the leftover selection box and one that feels healthy with a kick of cheekiness !
It is 2nd January and I, for the first year in a long time, don’t feel the same craving for extremes in my health. Not that I was obsessed but the indulgence of Christmas and new years eve maybe tipped me more towards the real need to clean up my eating act.
All measurements are approximate because my thoughts of sharing here were an after one. I also used water to make sure the mixture was sticky and would come together a little better before rolling into balls. I make so many healthy bites that I like to experiment between adding oat milk, more oil or water. In this recipe the water is best, there is enough coconut oil instead of adding more.
I often use different nut butters instead of peanut butter- cashew or almond, but in the latter months of 2021 I figured that the use of peanut butter was fine because these are my treats after all. Bites like this are not the full hog of a snickers bar but a little bit of sweetness is ok in my life. Amend the but butter as you see fit. The less chemicals the better to be fair.
1 cup Oats
2 tbsps Pumpkin seeds
1 tbsp Sunflowers seeds
9 Medjool dates
1 cup cashews
Mix dry ingredients in a mixer until it starts to mash and breakdown.
In a pot over the pan warm
3/4 cup coconut oil together with 3/4 cup smooth peanut butter + 2-3tbsps maple syrup .
Mix wet and dry ingredients together.
Top with half a bar of Cadbury dairy milk from the kid’s selection box!
